Coconut milk

Okay folks those of you who use coconut milk do you drink it plain, put it in recipes or WHAT???? I mixed 6 ounces with my protein shake today and it was so thick I couldn't stand it. Love some ideas for adding into my day. Thanks!

    I use it primarily in recipes, usually with curry paste. Sometimes I use an actual recipe, other times I just improvise with whatever ingredients I have on hand (meat, chicken, shellfish with a lot of vegetables).

    How do you use curry paste in a recipe? Do you have a favorite brand? Is it like curry powder with water added or something completely different? Does it use any tomatoes or peppers?

    Coconut milk is great in recipes. I've tried using it as a thickening agent in soups before, but I've heard it can also be used in Primal baking (with coconut flour and oil). If you're going to use it in a protein shake, I suggest either thinning it with water, or not using as much. Adding ice into it should make it less thick as well.

    I've been using Thai Kitchen curry paste that comes in a jar, but i have also used some in packets. I usually use the red curry paste, but i also keep the green on hand. It has the consistency of tomato paste, only thicker. The green has chili pepper in it and the red has some other red peppers, but I don't think any tomatoes. If you are on the autoimmune version of whole 30, it probably wouldn't work for you. I haven't tried that protocol yet, but may check it out when I am done with the regular Whole 30 reintroduction period to see if that makes a difference for me.

    Funny you mentioned thinning it out! LOL! I started with 6 ounces of coconut milk with two scoops protein. Was way too thick so I added ice, didn't want it diluted so I added more protein. I threw it all in the blender and had one of the biggest protein drinks in my life

    IMHO, don't waste it in a shake. Make something delicious out of it. Like a curry, or ice cream.

    Would probably work as a sub for cream in a recipe for butter chicken, too.
