Hey guys I thought we would start a page with some recipes:
- for a veggie dip- use plain greek yogurt with dry ranch dip for a healthy dip for your veggies
- egg cups- 3 whole eggs, 6 egg whites scramble, cook up your favorite veggies and spoon evenly in a 12 muffin pan ( spray the pan first). poor the eggs in the tins and cook for 15 min @ 350 degrees. Perfect quick morning breakfast/snack

We had these tonight and they were amazing. I can't take credit as I stole the recipe off the Doctor's website.
Turkey Sausage
2 lbs lean ground turkey (I bought the Jenny-O tubes that said Lean on them)
3/4 tsp ground ginger
1-1/2 tsp salt
1 tsp dried sage
1 tsp fennel (I didn't have any so I used 3/4 tsp Anise seed)
1/4 tsp red pepper flakes
1-1/2 tsp ground black pepper
Mix all ingredients together well in a bowl and form into sausage patties. Cook in skillet until no longer pink in the center (about 10-15 minutes).
I have a George Foreman grill which is how I always cook sausage. I put them on it for 10 minutes at medium high setting. We saved our 2 eggs for dinner and had eggs and sausage. Really easy and really, really good. This is the first time in my life I've ever bought ground turkey anything and I must say I was pleased. They are very peppery so you could reduce the black pepper if you wanted milder sausage.0 -
Strawberry Peach Spinach Smoothie
1/2 cup kefir
1/2 cup greek yogurt
1 cup of strawberries & peaches (I used fresh, but frozen works great too-just omit ice if you use frozen)
6 leaves of fresh baby spinach
3-4 ice cubes
put in a blender (or magic bullet is what i used) and blend away!
*a note on this one, i think you can add some Truvia to this as it is really not sweet like what your are probably used to in a smoothie, I am really trying to break my dependence on sugars so i did not add it. Once I got over the fact that it wasn't going to be sweet like the smoothies i'm used to and enjoyed the natural flavors of the yogurt, kefir and fruit I was fine. Also add the spinach, trust me you won't know it's there and it's a great way to get some extra greens in, especially at breakfast time!0 -
So I am going to share a couple recipes here because they kind of go together or seperately...
Also you have to bear with me, i don't measure a lot of this stuff so i'll try my hardest
Bruschetta salad:
4-5 Roma tomatoes diced (regular work fine as well)
1-2 garlic cloves minced
7-8 basil leaves (fresh) julienned
1/4 onion any color, fine dice
1 T Olive Oil (optional)
Salt (to taste)
Pepper (to taste)
Combine all ingredients in a bowl, stir, refrigerate till ready to eat.
Balsamic Mustard Chicken:
1/4 cup Balsamic Vinegar
1/4 cup brown mustard (any mustard would probably do besides plain yellow mustard here)
1 T minced garlic
Salt
Pepper
4 Boneless, Skinless, Chicken Breasts
Combine all ingredients in a large ziplock bag, marinate chicken 30 min. or longer
Take chicken out, shake off excess marinade (do not rinse it off though)
grill at about 375 for 20 min. (time may vary)
* You can serve the Chicken with the Bruschetta over it, it's an awesome combo!! I grilled extra chicken and made a large batch of the bruschetta mix and for lunch the two days following it made a salad as follows; a bed of mixed greens and spinach topped with the chicken and bruschetta mix and a little balsamic vinegar drizzled over the top.
** The bruschetta mix and salad is also awesome with steak (once you get to Cycle 2!)0 -
We had these for dinner tonight and they were very good. I don't like fish, never buy it, never cook it, and eat it maybe 1 time per year at a restaurant but I am adding this recipe into my file.
Cajun Catfish
2 tbsp olive oil
2 tsp garlic salt
2 tsp dried thyme
2 tsp paprika
1/2 tsp cayenne pepper
1/2 tsp hot pepper sauce
1/4 tsp pepper
4 catfish fillets
1. In a smal bowl combine the 1st 7 ingredients. Brush over both sides of fish.
2. Place fish in a 13x9 dish or cast iron skillet coated with nonstick spray.
3. Bake at 450 for 10-13 minutes or until fish flakes easily with fork.
Serves 40 -
My favorite is Chicken in Crockpot with Salsa:)
Throw in 4 chicken breasts, salsa, mushrooms, and bell peppers I use green red orange and 2 chopped onion:) 4-6 hours and you have a meal to throw on top of shredded lettuce, yummy chicken taco salad
Another Crockpot favorite is 4 chicken breasts, 1/2 cup of balsamic, mushrooms, and 3 pears chopped, trust me it is yummy! 4-6 hours too.
Quick chicken line pan with tin foil first for easy clean up, 1 chicken breast sprinkle with balsamic, little garlic salt and minced onion on 400 for about 40 min in my oven sooooooooo good. Side salad and you have lunch or dinner I am all about quick with 5 kids!
Also for you dessert lovers my mock ice cream more like an ice but close.
1 cup almond milk, 1 tablespoon of truvia, 1/2 tablespoon of vanilla extract. Put in freezer and sprinkle with cinnamon:) Soo good and light and cycle 1 compliant

Veggie eggs!
Preheat grill
I whisked 2 whole eggs or 4 egg whites until light and frothy
Lightly sauté in a non stick frying pan,1/4 red onion, 1/4 red bell pepper, 2 garlic cloves & 2 button mushrooms. Add whisked eggs to pan, cook on hob for a couple of minutes until base is golden. Add rocket or spinach on top, season with mixed herbs, black pepper, paprika (optional) and sprinkle a little parmesan cheese (optional). Put pan under grill for a 3-4 minutes until top set. Remove from under grill, fold in 2 onto plate and serve with freshly sliced tomatoes. Yummy!0 -
