Peanut Butter Granola Bars recipe

This is a really tasty snack that you can make with natural ingredients and keep them in your desk/lunchbox/counter as a great alternative to pre-packaged snacks. This is from the Forks over Knives cookbook. I've made them 4 times now and it is a staple in my house...even the cockatoos love them!

8 - 12 servings (depending on how you cut 'em)

1/2c smooth, natural peanut butter
1/4c 100% pure maple syrup (Grade A or B)
1/2 brown rice syrup (usually on bottom shelf in baking aisle at Whole Foods)
1tsp pure vanilla extract
2c whole-rolled oats (not quick or instant)
1/2tsp salt

1. Preheat oven to 350. Line a baking pan (9x9 or 9x12) with aluminum foil.
2. In a small saucepan, mix together peanut butter, maple syrup, and brown rice syrup. Gently heat over low heat, stirring, until ingredients are warm and well-blended.
3. Remove from heat and let mixture cool a few minutes.
4. In a large bowl, mix together oats, vanilla, and salt. Add the peanut butter mixture and mix well.
5. Wet your hands and press the oats into the pan. Firmly press the mixture as tightly packed as you can.
6. Bake for 15-18 minutes (until sides are LIGHTLY browned.
7. Remove pan from oven and let cool 10 minutes.
8. Transfer foil with granola to a cooling rack and let cool completely.
9. Cut into squares or rectangles (8-12 servings)
10. Store in a tightly sealed container at room temperature.

    what is the texture like? I have tried a few recipies but they usually just fall apart, or they are too hard to cut!
