Simple Raw Kale Salad
(Calories: ~173)

Ingredients:
1.5 cups of raw kale
1 dill spear
1 green onion
5 cherry tomatoes
1 teaspoon dried unsweetened cranberries
2 walnut halves

Dressing:
1/2 teaspoon of honey
1 teaspoon of mustard
1/2 teaspoon of olive oil
1/2 balsamic vinegar

Directions:
Chop of all of the ingredients to your liking (including the walnut halves), and mix in bowl.

Mix all of the dressing ingredients in a separate container, and pour over salad in bowl.

Yummy! Takes 10 minutes.

  • Creamy, Fresh and Green Tuna Salad
    (Calories: ~200)

    Ingredients:
    1 cup shredded iceberg lettuce
    2 ounces of tuna fish canned in water
    3-5 cherry tomatoes
    1 dill spear
    1 green onion
    1/2 teaspoon dried unsweetened cranberries

    Dressing:
    1 teaspoon of mustard
    1 teaspoon of olive oil
    1 to 2 tablespoons of Fage nonfat Greek strained yogurt (to replace mayonnaise)

    Directions:
    Chop the cherry tomatoes up, into quarters. Chop dill spear and green onion finely, as well as the cranberries.

    Mix into bowl, with lettuce and tuna.

    Mix the dressing in a separate container and add to salad.

    Of course, add salt and pepper, paprika, and other spices to taste. (I like to add cilantro and parsley, too.)
  • This is a very low calorie, delicious, and healthy salad! Very fusion, in terms of tastes.

    Crunchy, Spicy Red Kale and Shiitake Mushroom Salad
    (Calories: ~150)

    Ingredients:
    1.5 cups of organic red kale
    2 organic cherry tomatoes
    2 green onions
    1 [peeled] Persian cucumber
    1/4 cup fresh, pre-sliced shiitake mushrooms
    1/2 a hard-boiled egg

    Dressing:
    2 tablespoons Panera Bread brand, Raspberry Vinaigrette Fat-Free Salad Dressing

    Directions:
    Chop the kale; quarter the cherry tomatoes; chop the green onions, and cucumber, and egg; add all of this to a bowl, and throw in the mushrooms. Mix.

    Add the dressing, and top it off with dried harissa spice, dried cilantro, pepper, salt, and whatever other types of seasoning you like to use! (The harissa really makes it for me, and adds the spicy kick!)

    Simple, Laid Back, Green Egg Salad
    (Calories: 79)

    Ingredients:
    1/2 head of romaine heart lettuce
    3 cherry tomatoes
    2 green onions
    1 dill spear
    1/2 a hard-boiled egg

    Dressing:
    1 tablespoon Panera Bread brand Raspberry Vinaigrette Fat Free Salad Dressing

    Directions:
    Chop up the lettuce. Quarter the cherry tomatoes. Chop up the green onions and dill finely. Chop up the half of the egg.

    Mix together in bowl.

    Drizzle with vinaigrette.

    Southwestern Salad
    The oregano and ancho chili really pack in the flavor!

    4 cups torn romaine lettuce
    1/3 cup fresh salsa (such as Safeway Signature Salsa Cafe - Salsa Fresca Mild)
    1/2 can black beans (such as S&W Premium)
    1/3 cup frozen corn, thawed

    Dressing:
    1 T nonfat plain Greek yogurt
    Lime juice to taste (about a teaspoon; bottled is fine)
    A dash of each: oregano (preferably Mexican), ancho chili powder, cumin, salt

    Shake the dressing ingredients together in a small container with a touch of water; toss with salad ingredients just before serving.

    3g fat
    11g protein
    14g fiber

    I sometimes add 1/3 of a medium avocado, but it's an additional 83 cals, 2 carb, 8 fat, 3 fiber. Honestly, with all the other flavors, you don't need it!
  • Here is a very heart-healthy salad recipe for less than 100 calories, believe it or not!

    Sweet Beet Salad, with Shiitake Mushrooms and Sprouts
    (Calories: ~70)


    Ingredients:

    1/3 of romaine heart lettuce head
    1 medium green onion
    1/4 cup sliced shiitake mushrooms
    1/4-1/3 cup of broccoli sprouts
    1/2 pickle/dill spear
    1 small beet from Organic Love Beets brand (precooked beets)

    Dressing:
    1 tablespoon fat-free poppyseed dressing from Panera Bread (8 calories)
    1 teaspoon dijon mustard

    Prepare:

    Chop the lettuce, green onion, mushrooms, sprouts, dill spear (finely), and beets, and add to bowl.

    Add both dressings - they are great mixed together!

    Add lots of spices of your liking. I add Harissa (Tunisian red-pepper spice), a little curry powder, cilantro, pepper, and salt.

    Enjoy! Makes one serving.

    (Calories: ~55)

    Ingredients:
    1/2 head romaine heart lettuce
    1 green onion
    1/2 dill pickle spear
    1/4 cup sliced shiitake mushrooms
    1/4 cup broccoli sprouts
    3 cherry tomatoes

    Dressing:
    1 teaspoon dijon mustard
    1 tablespoon fat-free poppyseed dressing Panera Bread brand

    Prepare:
    Chop and add all ingredients in a bowl together, in a layered manner - it looks prettier this way!

    Add the dressing, and lots of fun spices, such as Harissa, red pepper, cilantro, garlic, curry powder, salt, and pepper!

    Yum! Only 55 calories and is a good-sized portion, and really fills you up.

    Grilled Southwestern Salad
    serves 2 @ 197 calories each

    Romaine Lettuce - 1 Head
    Bush's - Black Beans - Low Sodium - Drained and Rinsed, 1/2 cup
    Onions, Sweet, Raw 100 g chunked
    Peppers, Sweet, Red, Raw,100 grams chunked
    Super Sweet Whole Kernel Corn (Frozen), 1/3 cup
    Newman's Own - Mild Salsa - Tequila Lime, 4 Tbsp
    Zest and Juice From fresh Lemon 2 lemon
    Avocado 50 g, diced

    Preheat the grill to medium high heat.
    Cut the head of lettuce in half length-wise leaving the core intact. Spray cut side of each half with nonstick spray. set aside.
    Rip a piece of foil that will fit your peppers, onions and corn all together.
    Spray said foil with nonstick spray ON THE SHINY SIDE and layer the veggies on it in a single layer. (helpful hint: before loading the foil, place it on an inverted baking pan or one without sides, to support it all the way to the grill. Slide it off onto the grill. When ready, slide it back onto the inverted pan to support it all the way inside. No loss of veggies :bigsmile:)
    Place lettuce and veggies onto the grill and lower the heat a little on the Lettuce side of the grill. (you want to GRILL the lettuce not char it :wink:)
    While the grill is working its magic, put the salsa, lemon zest and juice into a blender and blend until smooth.
    Grab your veggies off the grill.
    Each plate >> put down your lettuce halves, top with grilled veggies, top with beans and avocado then drizzle the dressing evenly over the salads :bigsmile: enjoy! :D

    WANT SOME ZIP? Roast a jalapeno with the veggies, then chop and add to salads :wink:

    65 calories per serving (recipe yields 4 servings)

    Ingredients:
    1/2 of a medium size head of red cabbage
    2 medium green onions
    6 cherry tomatoes
    6 pieces of organic dried and unsulphured apricots
    2 tablespoons Fage Plain 0% Greek yogurt
    1/2 tablespoon Westbrae Natural Stoneground Mustard, No Salt Added (0 calories!)
    1/4 tablespoon Thai Kitchen brand green curry paste
    1/4 tablespoon Thai Kitchen red curry paste authentic

    Prepare:
    Shred or chop or slice half of red cabbage head, as well as the medium green onions. Quarter the cherry tomatoes. Chop into very small pieces the apricots. Add to large bowl.

    In a separate bowl mix the "special sauce": the yogurt, mustard, and curry pastes. Add to the large bowl of salad. Mix very well.

    Spice with curry powder, red pepper, pepper, salt, or whatever else you like, oregano, etc.

    Enjoy! Makes 4 large servings! to last a few days for yourself, or to share.
