I love curries and mexican food - anyone found any tried and tested ideas? I am happy to use Quorn as a substitute!

I make a veg thai curry with tofu (I fry it first till it's brown), onions, green beans, mushrooms, sometimes broccoli, green peppers and beansprouts (depends what veg I have in the fridge but these are all relatively low carb as far as I know), a tin of coconut milk and some thai green curry paste. Oh and a veg stock cube. Couldn't be easier and would work well with quorn chicken style pieces as well, though they are way higher in carbs than tofu!0
