Curry and Mexican Mmmmmmm

I love curries and mexican food - anyone found any tried and tested ideas? I am happy to use Quorn as a substitute!

    I make a veg thai curry with tofu (I fry it first till it's brown), onions, green beans, mushrooms, sometimes broccoli, green peppers and beansprouts (depends what veg I have in the fridge but these are all relatively low carb as far as I know), a tin of coconut milk and some thai green curry paste. Oh and a veg stock cube. Couldn't be easier and would work well with quorn chicken style pieces as well, though they are way higher in carbs than tofu!

    Try yourlighterside.com for some ideas for mexican food, these recipes look good!
    Haven't tried the quesadillas yet but am working up to it!
