Yummy Herb Ricotta Flan

I made this at the weekend for my friend and we both really liked it so thought I would share. Serves 6.
750g ricotta cheese
70g Parmesan (I used strong cheddar as my mate is veggie)
3 large eggs, separated
8tbsp chopped herbs (I used parsley and basil as these are my favourites)
pinch salt and pepper
1)Preheat to 180 celsius/ Gas4 and line a deep cake tin (it will stick otherwise).
2) Blend the cheeses and egg yols until smooth. Add the herbs, season to taste and blend until smooth. Transfer to a bowl.
3) Whisk egg whites to stiff peak stage and fold in the blended mixture gently.. Put in baking tin.
4) Bake for one hour until golden.
That's it. Really easy and has a nice mouth feel hot or cold. I had it with home-made salsa and some pesto.
