Parve Crock Pot Recipes

I would appreciate receiving some parve crock pot recipes - preferably ones that you just throw everything into the the slow cooker in the morning and dinner is ready when you get home. Thanks!

    Pumpkin stew:

    Pumpkin in large pieces
    Water, half way, no need to cover completely
    2 onions, chunks
    1 Can of Chick Peas (or any other beans)

    Spices:
    2 T Paprika
    2 T Chili Powder (opt)
    1 T Oregano
    1 T Parsley
    1 T Coriander
    2 pinches of Thyme
    2 pinches of Rosemary
    2 bay leaves
    1 tsp garlic (or more if you like)
    1 T salt

    This is our favorite cholent for Shabbat, and after a year, we're still not sick of it. :)

    Sometimes we add a roast to it, which tastes better without the rosemary and thyme.

    I love making red lentil curry in the slow cooker. I don't have a recipe because I make things up but I can give you an idea. Sauté and onion in canola or preferably coconut oil. Add lots of curry powder, some fresh or granulated garlic, salt, a bit of cinnamon, cumin and red pepper. Put in in the crockpot with red lentils, carrots, kale or spinach, water and half to one can coconut milk. Great alone or over rice, quinoa or polenta.

    Fish Stew

    2 green peppers
    2 red peppers
    3 tomatoes
    1 hot red pepper
    6 T chili powder
    3 T paprika
    1 T coriander
    1 T parsley
    salt
    slices of lemon
    Fish fillet (we often use Nile perch, but it's great with salmon, too)

    Cut the veggies into coarse pieces and toss into the pot, add spices, place fish on top, squeeze and then toss the lemons on top of the fish, add water up to (not covering) the fish.

    I don't have a crock pot. Would these recipes work in a regular pot?
    Can I use butternut squash instead of pumpkin?

    I use them in a regular pot. Bring to a boil, then simmer on the lowest burner. I grew up using a crock pot, so I think these would be good for it, that's why I shared them, even though I've never tried them in the crock pot.

    Butternut squash is great in that recipe, too! I prefer pumpkin but my kids like the butternut better.
