These are really good and easy to make.

1/2 cup ricotta
4 eggs
1 tsp baking powder
cinnamon
Splenda

Makes 4 waffles. I top these with berries and Splenda. Yummy and filling!

    Yes, in a waffle iron. I suppose they might work for pancakes too but I've never tried. Having them right now! :bigsmile:

    Ricotta? I'm having a hard time wrapping my head around ricotta waffles! But, if I had a waffle iron, I'd give it a try. I LOVE my cream cheese pancakes!! And sugar free syrup has virtually no net carbs! ????

    I know, it doesn't sound like it would work, but it does. They look just like regular waffles.

    Can you share your recipe for cream cheese pancakes? I may try them in the waffle iron, most because it's alot faster than standing there flipping pancakes.

    I make a delicious faux ice cream with ricotta. It really is a versatile ingredient.
