I am starting this thread in hopes that we can share a few yummy (and healthy) recipes. I love to cook so I know that I'll be sharing a few on here! Is everyone else following the dietary guide for Insanity? I myself am not- with the meal plan provided I found that it would be too hard to work with my daily schedule, but I am planning on cutting down on carbs and overall eating more healthy.

This recipe is one of my favourites! A ton of flavour for a salad, if you normally find some to be too bland.
I gave the exact measurements for the homemade dressing for this salad, but for the rest of the ingredients you can sort of gage what you like. (I don't over do it on the cashews or the bacon, just a sprinkle of both)
Apple Spinach Salad
Ingredients:
Toppings
- Spinach
- 1 Medium apple, diced
- dried cranberries
- crushed cashews
- diced bacon bits
- sweet potato crisps
Apple Cider Vinegarette Dressing
- 1 garlic clove, minced
- 1 tablespoon Dijon mustard
- 1/4 cup apple cider vinegar
- 2 tablespoons honey
- 1/3 cup extra- virgin olive oil
Directions:
1. Combine all of the dressing ingredients into a mason jar (or container). Shake until the honey dissolves and the ingredients are well combined. For best flavour, allow the dressing to marinate for at least 30 minutes before serving over spinach.
2. Toss the dressing with spinach
3. Add all toppings to salad
4. Enjoy!
Directions to make sweet potato crisps:
- Buy 1 large sweet potato. Slice as thinly as possible and then cut into quarters
- toss sliced sweet potatoes in olive oil - just enough to cover them.
- add rosemary and thyme for taste
- bake in oven at 350 degrees for 20 minutes or until crisp0 -
A very simple snack I like to make after workouts is below. It is high in protein and low cal. You can add as much or little of the mustard and relish to add flavor without adding many calories. This is a perfect size for after an insanity workout.
one can tuna in water (drained)
brown spicy mustard (or any other mustard)
pickle relish (sweet, dill, or any other kind you choose; I like to switch it up and go for spicy versions)
NOTE: I don't recommend eating this with crackers; that will drastically increase the calorie count! I used to do this until I input the meal on MFP and saw the numbers.0
