Tonight I made oven baked chicken fajitas and served them in bibb lettuce cups. Even my wife raved about them and she is super picky!
The chicken turned out so moist. I plan on making a pan of it and having lettuce wraps for work or southwest salad.
Recipe:
1# chicken breasts- cut into strips
Peppers ( I used red and half a green)
Medium Onion
2 tbsp canola oil
1 tsp chili powder
1 tsp cumin
Salt, pepper, and garlic powder
Directions:
Spray 9x13 pan with pam spray
put chunks of chicken in bottom of pan
mix oil and spices and pour over chicken
Top with peppers and onions.
Bake in 375 oven for about 40 minutes
I served mine on bibb lettuce leaves and had a small serving of pico de gallo and a sour cream

This is my favorite way to make fajitas! I love that you can get it in the oven and set the timer as opposed to standing at the stove stirring, making sure nothing sticks to the pan. Plus this is an easy meal to accommodate the whole family. They still have their tortillas, and I do mine over lettuce. If you want to kick up the heat, add jalapenos or green chilies too!0
