I know I'd like a salad w/bacon on it; but what kind of dressing goes with that ? Also, I'd like creamed spinach ? Or any other ways you think are tasty : )

I like it lightly sautéed in garlic and olive oil.
On a salad, blue cheese goes great with bacon and spinach!0 -
Creamed spinach is very easy. Just put it in a pan until it's cooked, then add 2 tbsp of butter(or more if that's your preference) and two tbsp heavy cream(or more). If you like it with cheese, add some sharp cheddar or full milk mozzarella.0

Mine is similar to this. Melt 1-2 Tbs butter, add 1-2 oz cream cheese (or more) and a little HWC to thin it out to taste. Add a pinch of cayenne pepper. Add one 10 oz frozen spinach pack, squeezed dry. Heat through.0 -

Ok, I'm going to go in a completely different direction.
How about spinach cream soup?
In a saucepan, add chicken broth, add spinach (fresh or frozen). Heat until spinach is tender. Pour soup in blender (or use immersion blender in saucepan) and mix until completely smooth and creamy. Pour back into the pan and add heavy cream, as well as salt and pepper to taste.
For amounts, figure about 3/4 cup broth per serving. With each serving, use about 1/2 cup spinach (raw or frozen) and about a tablespoon of heavy cream.
If you happen to have some sour cream, basil pesto and extra virgin olive oil handy, after pouring your soup in a serving dish, add a dab of sour cream in the middle of your soup, and drizzle over a bit of some basil pesto and extra virgin olive oil. Enjoy!0
