I once made a lasagna casserole using mashed cauliflower instead on noodles it was really good.

You're right, it's applesauce instead of oil - and it works well in most baked goods
One thing we've been doing lately is frozen pieces of high water content fruits (watermelon, pineapple, canteloupe, peeled clementine/tangerine slices) instead of processed ice pops or ice cream bars. It's great to be able to have something sweet that doesn't break the calorie/sugar bank.0 -
Holly, agave nectar is a natural sweetener from the agave plant. Our grocery stores here in Arizona carry it in the sugar aisle.
And quinoa is really good. I like the red quinoa because I think it has a nuttier flavor. I have a fiend who makes a fantastic cold quinoa salad with ginger, mandarin oranges, cashews and lots of other goodies.0 -

Greek yogurt has been being worked into my fridge!
Applesauce also binds so you can use it to replace eggs and it's sweet so you can use it to lower extra sugar! I make applesauce muffins that is amazing (and I make the applesauce too so I control it all)
