Recipes!!

I love cooking. I especially like taking recipes that are not healthy and turning them into delicious, mostly-guilt free breakfasts, lunches, and dinners. We all know that controlling what goes into our mouths is a good portion of maintaining a healthy lifestyle. As such, eating out at restaurants can be taxing!!! Not just on the wallet either, the waistline can take quite a hit as well. Taking your favorite restaurant meals and transforming them into something that can be enjoyed at home will help satisfy the craving, but keep the calories in a reasonable goal. One of my favorite places to eat when I am on campus is Jamba Juice (TM). They have an awesome spinach wrap that is delicious, and healthy. But, eating there can cost at minimum $7 each visit!! for a college student on a budget, that can add up very quickly. So I created my own version of the spinach wrap, that actually has fewer calories, but is just as satisfying. These are great, especially for a low cal breakfast on the go!!! I can pop one in the microwave and it's ready in 2 1/2 minutes!!!

Spinach Wraps (makes 8 wraps, 1 serving=1 wrap)

141g of Organic Baby spinach leaves (I think it is a 30 oz container, I got it from ALDI, you do not have to use organic spinach if you do not want to)

One 15oz container of Egg Beaters, southwest style

1 medium sized vidalia onion, or whatever onion you like diced

1 cup reduced fat shredded cheese (I used sargento shredded cheddar)

1 package Ole Mexican Food - Whole Wheat High Fiber Low Carb Tortilla Wraps

Fat free non-stick spray

1. Spray a large skillet with the non-stick spray and allow to heat on med-high heat.

2. Add the onions and allow to saute' for approximately 2 minutes, or until translucent

3. Dump the eggs and cheese into the pan stirring until cooked though.

4. Add the spinach, remove the pan from the heat, and cover with a tight fitting lid.

5. Allow the spinach to wilt and reduce down, stirring to incorporate into the egg mixture.

6. If needed, return the pan to the heat and allow some of the water accumulated to cook out.

7. Assemble the wraps, burrito style.

8. (Optional) Grill the burritos in a non-stick pan until brown on both sides.

9. Wrap in wax paper, and then in plastic wrap and freeze until use.

10. Microwave on high for 2.5 minutes and enjoy!!!

With the ingredients listed above, each wrap contains

182 calories, 17 carbs, 3g fat, 19g protein, 736mg sodium, and 1 gram of sugar.

Overall, it's not a bad breakfast, and it's great for days that are hurried. Compared to their nutrition which is as follows:

  • They are delicious, and full of flavor!! You don't even need to add any thing really, maybe salt and pepper. But without it, they are still good. I like carrying them to school with me!!! Plus, because it is only 182 calories, I can still indulge in something else, like a smoothie, or some cottage cheese and fruit. The protein keeps me going most of the morning too.
  • I have been using protein powder to create meal replacement shakes in the morning for breakfast. It's filling, packed with protein, and keeps me going... and it's portable, something that is extremely important for me. If you like Resse's peanut butter cups, you'll love this recipe for a delicious protein shake.

    1 scoop of chocolate protein powder
    1 tbs of PB2
    1.5 cups of Light almond milk, or the milk of your choice
    .5 cup of ice (if you like)

    Place in single serve blender and blend away. Sip and enjoy!!!!

    *** Using a different milk will adjust the caloric content. My advice is to input whatever you use as a recipe for MFP***
