veggie game..

ok... i notice some of you don't eat a lot of veg.. so lets see if we can make getting in our veggies fun.. lets eat our way through colorful veggies..

the game is simple.. eat as many colors of veg as you can. each day.. we may even lean some new veg we have never tried.

ill start us off..

today 7 colors

spinach- green
broccoli -green
celery- light green
mushrooms- brown
tomatoes- red
peppers green, red, yellow, orange
carrots- orange
onions- white

    The Sante Fe Chicken I had has:

    Green Chilis - green
    Tomatoes - red
    Corn - yellow
    Jalapenos - green
    Onion - white
    Garlic - yellow/white (?)

    Are beans a veggie or not? If yes, it also had black beans. :tongue:

    I put salsa on my eggs this morning:

    Tomatoes - red
    Onions - white
    Garlic - yellow / white (?)

    beans are not a veggie. they are legume, but please keep eating them.. beans are great!

    veggies are nutrient dense, filling and oh so good for you.

    I don't think beans count as a veggie. They are a legume, like peanuts!

    However, they are still very yummy!

    Legumes can be fruit, seeds or grains... interesting.

    When I think of beans I think protein! LOL. But some are also high carb. So much to learn still. I try to keep my carbs low but I'm thinking beans probably fall into complex carb which is much better than simple, processed, sugary or starchy carb.

    i eat beans everyday.. yes they are carbs and protein.. being plant based its where i get alot of my protein. they are great.

    Summer squash

    I've recently started roasting veggies and I LOVE them that way! I found a recipe on skinnytaste.com for roasted cauliflower, I've made that twice, tonight I roasted the zucchini and summer squash using the same premise as the cauliflower and it was really good.
