    Oh I'm so IN!
With tomorrow being Super Bowl Sunday I'm already giving myself a pep talk that all the junk food isn't worth losing what I've worked so hard for!:noway:

Awesome Angela!!! Yes, I am in with some modifications. I see a lot of fitness/exercise challenges here and in facebook but no nutrition challenges. I love that I found this group!!! :drinker: :drinker:

On Sundays, my husband cooks me breakfast and it consists usually of 2 pieces of bacon, 2 eggs scrambled or in an omelette and a pancake. It is sweet of him and I don't eat like that the rest of the week. So I will ask him to downsize the servings. For the pancake I use a little of maple syrup with berries. No Super Bowl for us, we are not really sports fans so we are safe tomorrow. :drinker:

i'm in. going to keep it really simple this week. i'm still sick, but am eating fruit, veggies and chicken this week.
because i haven't been able to exercise because of my knees ... i have to be really diligent with my nutrition.

not a football fan, so Super Bowl isn't an issue at my house. told the boys they can go out to someone else's house
it also helps that i have the flu ... no one wants to be at my house! yay!!

i am keeping my sugars below 30mg. wow ... it's amazing how much sugar is in most foods. when you become aware of what your eating it's really eye opening! i have found that keeping my sugars low is eliminating cravings. also, other macros seem to fall into place easier.

Looks good to me! I'm also not a football fan and we haven't planned on going to any parties, so I'm safe for today too. I'll be going to the grocery store today to get lots of healthy foods for this week. I'm going to take this list with me.

I'm in on the clean eating this coming week. (My weeks start on Mondays) This past week has been a crazy week for me.

    - Had some trouble sleeping early in the week so I was crabby with everyone, including my boss, who was so kind and compassionate over it, for which I am extremely grateful.

    - Then I got sick on Wednesday with a cold. No longer crabby, just tired.

    - Friday a great thing happened. My department was presented with the opportunity to expand our business, and bring in potentially over 1 million dollars a year for my company, and expand our staff by - jeeze, we don't even know yet! This is huge, and it's been a roller coaster of a week! This will bring a lot of money and GOOD jobs to our small community. On cloud nine...

A couple of you asked for a recipe from Vegetarian Times magazine. But, I discovered that their website has their magazine recipes posted in it! When I did a search on this recipe, I got a pop-up ad to subscribe to the magazine, that wouldn't go away. But, I hit the back button, then the forward button and I was able to view the recipe without the pop-up ad. So, if you get the pop-up ad, just try what I did to get rid of it. Here's the link:

I would not eat it as a whole meal, as there is little protein in it. But, it makes a fantastic side to an asian style meal. And for me, the pickled ginger made the dish for me, but I love strong flavors. If you decide to make a meal out of it (it makes a lot), then add some tofu, shrimp or chicken to it. Enjoy!
