What are you snacking on?

I'll start by saying I'm doing AWESOME at not wanting sweets or chips or any of my late night wants. And the weight is falling off with the bread taken out of the equation. I DO miss bread, but if I eat it while on the Janumet, all hell breaks loose.

But tonight I want a snack! I'm also worried that I can't seem to hit 1200 calories. Probably cause all I'm eating is chicken breast and salad and veggies. I don't seem to get very hungry since the doctor put me on the medication.

I like vegetables and all, but they can toss it. It's exam week and I want....something.

    A few things I snack on:

    Celery with peanut butter
    Small Greek Yogurt
    Small square of dark chocolate
    Steamed Edamame
    Mixed nuts
    Green Beans
    Slice of Ham
    Hand full of grapes
    Hard Boiled or Red Beat Egg

    I also had a difficult time getting enough calories when I first cut out a lot of my usual carbs.

    similar to previous post I snack on:
    Fage 2% greek yogurt
    dark chocolate
    mixed nuts
    jalapeno string cheese or sharp cheddar
    KIND bars (only the "nuts" ones) - when I need a sweet treat on the go
    sliced apple & peanut butter
    hummus & carrots
    grape or cherry tomatoes
    avocado wrapped in turkey slices
    pickles, olives

    I used to be a tremendous baker. Both in quantity of baked goods in our home and joy I get from baking. I've done some experimenting with low carb/ low GI baking and while I can make things that don't spike my blood sugar, they don't always taste particularly good. I know this doesn't work for everyone (eat to your meter!) but I've found that I can have some carb if I pair it with fat and protein, so I can have a homemade mini-banana muffin or half a mini-bagel with cream cheese once in a while. Some people say it's hard to just have one, but I've found the first mouthful always tastes the best anyway, so it works for me.
