Keto Friendly Single Serving Peanut Butter Cookie

I found this recipe for a single serving Peanut Butter Cookie. I still have cravings for sweets but this is low in carbs and makes a pretty big cookie:
1 TABLESPOON Skippy All Natural Peanut Butter (3 CARBS)
1 TABLESPOON Vanilla Protein Powder (The whey protein powder that I use only has 1 carb for 1 scoop which is about 1/3 of a cup so that carb count is fairy low)
1 Teaspoon beaten egg
Mix all three ingredients together and place on a cookie sheet make a cross hatched shape on the cookie. Bake at 325 for 8 to 10 minutes. Let the cookie cool for a few minutes so that it doesn't crumble apart.
My cookie came out to be:
4.1g Carbs
2.8 Net Carbs

I've made some mighty tasty "pancakes" in the past using a mix of protein powder, ground flax and ground almonds (maybe coconut too?) ... may try to revisit that this morning.0
