Moroccan Scrambled Eggs - The hub is from Morocco and I LOVE the way they make eggs!
1 Tbs butter
2-3 eggs
Pinch of salt and pepper
1/2 tsp Cumin
Drizzle of Olive Oil
Melt butter in skillet
Scramble eggs to your liking adding salt and pepper
When finished sprinkle cumin on them and drizzle with a little olive oil
Serve with a wedge or two of soft cheese like President or Laughing Cow on the side
Josephs Pitas are also good to eat with these!

Bacon, Egg and Cheese Frittata
6 Eggs
Shredded Sharp Cheddar, 1.5 cup
Sliced Mushrooms (Can), 1 container (4/5 cup ea.)
Bacon Bits - Ready to Serve, 1 cup
Preheat oven to 350 degrees
Mix everything together in a pie plate or shallow casserole
Bake 30 min or until set.
I like to make this and keep a couple servings out. Then, I wrap the rest for the freezer. Makes a great grab and go microwavable meal for work!0 -
Baked Avocado Eggs!
Baked Egg in an Avocado
Directions
1. Cut an avocado in half lengthwise and remove the pit. You can use both or just bake one and save the other for later.
2. Spoon a little extra out of each pit-hole to make room for the egg.
3. Put your avocado half(ves) onto a cookie sheet and crack 1 egg into each avocado. Some of the egg will spill over onto the top of the avocado. This is totally fine. Next time though, I think i'll add some cooked bacon crumbles in the pit of the avocado BEFORE I add the egg. That sounds amazing! Bacon...mmmm!
4. Add whatever you'd like on the top. I salt and peppered mine and added some fresh shredded Parmesan cheese.
5. Bake at 375 for 15-20 minutes or until your egg and yolk are as cooked as you prefer. The avocado will be hot/warm, but not mushy as you may suspect.0
