I am struggling with this low carb thing, but I do think it is best for me, do you think it would be ok to slowly reduce?

IMHO yes. Some people do better with rigid guidelines and others don't. If you want to ease into things at a slower pace there's no harm in experimenting. It took various diets before I found what works for me. Hang in there.

Yes but watch out for hunger...personally I notice when I eat higher carb I get hungry. It's only at the beginning that I was strict trying to get junk off my menu - now I try to always make whole food choices. It's a journey....we learn from not being perfect. Now I watch for carb creep and eating in a way I can maintain for the rest of my life...Best Wishes!!

There's nothing wrong with taking it slowly. This method could probably be really helpful if you eat a lot of fast food and snack items and drink a lot of soda and sweet tea. Take things out one at a time. Like no more eating fast food. No more soda etc.
