    I have been eating these pancakes all week and they are amazing. Not too chocolatey or sweet. I top them with Maple Almond Butter.

    Tonight's dinner... Clean Crockpot peppered steak

    Feeds 5

    2 Bell peppers sliced
    24 oz beef sirloin
    1 medium onion chopped
    3 tbsp reduced sodium soy sauce
    1 tsp brown sugar
    1 glove garlic crushed
    1 cup reduced sodium beef broth

    Mix ingredients in crockpot and cook on low for about 4 hours or until steak is cooked to your liking.

    280 calories, 6 carbs, 8 fat, and 43 protein

    Serve over quinoa or brown rice. Yummm

    Protein packed snack idea... Greek Yogurt

    Here are My 3 favorite ways to eat it.

    Greek Yogurt with diced strawberries
    1 cup nonfat Greek Yogurt
    1/2 cup diced fresh strawberries

    Pumpkin Pie Greek Yogurt
    1 cup fat free Greek Yogurt
    1/4 cup pure pumpkin pure
    1 pack stevia sweetener
    cinnamon to taste

    or Apple Pie Greek Yogurt
    1/2 medium apple diced
    1 cup fat free Greek yogurt
    1 tbsp almond butter
    Cinnamon to taste

    I can't take credit for this recipe. But its yummy!!!

    ANCHO MACHO CHILI:
    serves4-6

    beef chuck/cubed (I used black angus as its more tender)
    2tsp salt
    1/2tsp pepper
    3tbsp oil
    3tbsp chili powder (I'm sure I used more)
    14 1/2oz chilis & tomatoes (diced)
    4-garlic cloves
    1med onion (minced)
    3/4c chicken broth

    Place all ingredients in crock pot and cook high 4-5hrs until meat falls apart. Serve with rice, or place in bowl and top with green onions, cheese and sour cream. :)

    325 calories per serving
    Net carbs 3.3g
    fiber 1.4g
    protein 43g
    fat 12.4g

    Tonights dinner. Serves 4.

    20 oz package of Shadybrook Extra Lean Ground Turkey
    4 servings of homemade pasta gravy
    3/4 diced onion
    1 green bell pepper
    2 cups of spinach.

    Sautee the peppers and onions with garlic and olive oil cooking spray. Add the ground turkey and brown. Add the gravy and spinach. Place serving over 1/2 cup of prepared Quinoa.

    I made this soup night before last and it was super yummy. I added corn for extra texture. This made 6 servings for us easily and it's great left overs.

    Ingredients:
    3 or 4 limes
    2 bone-in, skin-on chicken breast halves, each about
    10 oz.
    1 tsp. kosher salt, plus more, to taste
    1/2 tsp. freshly ground pepper, plus more, to taste
    1 Tbs. extra-virgin olive oil
    1 large white onion, chopped
    5 garlic cloves, minced
    1 jalapeño chili, seeded and minced
    3 cups low-sodium chicken broth
    3 cups water
    1 1/2 tsp. Mexican oregano
    1 Haas avocado, pitted, peeled and diced
    2 oz. queso fresco or mild feta cheese, crumbled
    Directions:
    Cut 1 lime into 4 to 6 wedges; set aside for serving. Juice as many of the remaining limes as needed to measure 1/4 cup.

    Season the chicken breasts with the 1 tsp. salt and 1/2 tsp. pepper. In a large saucepan over medium heat, warm the olive oil. Add the chicken, skin side down, and cook until browned, about 5 minutes. Transfer the chicken to a plate. Add the onion to the pan and sauté until translucent, about 4 minutes. Add the garlic and chili and sauté until fragrant, about 1 minute. Add the broth, water, lime juice and oregano, then return the chicken to the pan.

    Increase the heat to high and bring the liquid to a boil, skimming off any foam that rises to the surface. Reduce the heat to medium-low, cover partially and simmer until the chicken shows no sign of pink when pierced with the tip of a sharp knife near the bone, about 40 minutes.

    Transfer the chicken to a carving board and let cool slightly. Meanwhile, keep the soup at a simmer. Remove and discard the skin and bones, and shred the chicken into bite-size pieces. Stir the chicken into the soup. Adjust the seasonings with salt and pepper.

    Put the avocado, cheese and lime wedges in separate small bowls. Ladle the soup into warmed bowls and serve immediately. Pass the avocado, cheese and lime wedges alongside. Serves 4 to 6.

    I boiled the chicken so I didn't use the olive oil and I didn't add the avacado to the recipe calculator.

    Here is what I made last night and it was amazing.

    Turkey Taco Lettuce Wraps

    Servings: 4 • Serving Size: 2 taco wraps •
    Calories: 134 • Fat: 2 g • Carb: 10 g • Fiber: 2.4 g • Protein: 21 g • Sugar: 4

    Ingredients:
    1.3 lbs 99% lean ground turkey
    1 tsp garlic powder
    1 tsp cumin
    1 tsp salt
    1 tsp chili powder
    1 tsp paprika
    1/2 tsp oregano
    1/2 small onion, minced
    2 tbsp bell pepper, minced
    3/4 cup water
    4 oz can tomato sauce
    8 large lettuce leaves from Iceberg lettuce

    Directions:

    Brown turkey in a large skillet. When no longer pink add dry seasoning and mix well. Add onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes.

    Wash and dry the lettuce. Place meat in the center of leaf and top with tomatoes, cheese and salsa or whatever you prefer.

    1 scoop strawberry Shakeology
    1 scoop vanilla protein powder
    1/2 banana
    1 cup spinach
    ice
    1 cup water or more if desired

    I call this Caribbean Jerk Talapia. This is what I am making tonight. It is super easy!

    You need:
    Talapia filets (I use frozen bc it is cheaper but fresh is even better)
    Extra virgin coconut oil
    McCormick's Caribbean jerk seasoning
    Ground peper to taste

    Melt down coconut oil in pan and saute talapia filet in it. Sprinkle with seasoning. Really good and not at all fishy.

    I'm the type of guy who likes to just toss a bunch of stuff together and cook it, so here is my dinner for the week.

    Healthy stir fry

    3 large chicken breasts (cubed)
    4 cups of mixed veggies
    1 cup (before cooked) quinoa

    Additional spices optional. I like to keep my food simple :)

    Tonight's dinner Healthier General Tso

    chicken breast, fresh broccoli, and chopped onions sauteed in a little olive oil. Then you simmer it with Iron Chef General Tso sauce. The sauce is a little high on carbs but I mix it with a little chicken broth. It has no preservatives and is labeled all natural. Not completely clean but my husband and kids love it so I make it atleast once a month. Serve it over brown rice.

    I got the sauce at my local grocery store. I bought it from Acme but I think I may have seen it in Shoprite.
