I’m a working mom that loves to crock! But since it’s summer I’m not really in the mood for pumpkin soup or other winter meals.

What are your favorite summer crockpot recipes?

Here’s one I make a lot:
Slow Cooker Pesto Chicken and Mushrooms
Ingredients:
Garlic
Diced onions
1 container pesto
1/3 c chicken broth
1 box mushrooms, sliced
4-6 boneless, skinless chicken pieces (any kind or a combo is fine)

Put all ingredients in slow cooker and give it a good stir. Cook on low for 3-4 hours or on high for 2-3. Then eat either plan or with rice or pasta. My hubs loves it too.

    ^^ Yum! I'll have to try that chicken pesto one! I love pesto!

    I have two to share:

    Carnitas
    - about a 3 pound pork butt
    - 1/2 packet of Archer Farms Carnitas seasoning mix (found at Target)
    - 2 or 3 bay leaves
    - a few drops of water

    cook on low for 8 - 10 hours
    shred with a fork when done and serve on warm tortillas and add whatever toppings you like (we do salsa verde, avocado, and diced onions and cilantro).



    Ropa vieja (or some may call it Salsa chicken)
    - about 4 large chicken breasts (boneless, skinless)
    - taco seasoning
    - 1 can rotel

    cook on low 4 - 6 hours, no added liquid required
    shred with a fork when done and serve on warm tortillas and add whatever toppings you like (I do shredded lettuce, shredded cheese, sour cream, salsa, etc)

    I really didn’t know you could love an appliance until I got my first slow cooker when my kiddo was tiny, tiny.

    This morning I made lazy lady’s salsa chicken:

    Boneless/skinless chicken breasts
    Poured salsa on top
    Set timer
    Walked away…

    I absolutely love this!! I do it all the time. Try it with a beef blade roast, works amazing as well.

    Pulled BBQ chicken

    1 lg bottle of Sweet Baby Ray's BBQ sauce ( or any brand you like)
    4-6 boneless skinless chicken breasts

    Spray the inside of the crockpot with olive oil cooking spray (I prefer Olive oil spray to the "butter" flavor)
    Place breasts in the bottom of the crockpot
    pour BBQ sauce on top to cover chicken
    Cook on low 6-8 hours

    Shred using two forks and serve on garlic bread or hamburger buns with whatever sides you like

    Barbacoa

    Exactly the same as my carnitas post above except use a beef roast (instead of pork butt) and use the Archer Farms Barbacoa seasoning mix! Tastes just like Chipotle's! :laugh:

    Flacachica, you are my kind of cook!

    I also sometimes make an entire homestyle roast chicken in my 6Q crock. Just take a whole chicken, toss out whatever's stuffed in the neck, and season inside and out with:

    1 T kosher salt
    1 T paprika
    1 T onion powder
    1 T Italian seasoning
    1 t thyme
    1/4 t cayenne pepper
    1/2 t black pepper

    If I'm feeling fancy I'll add crushed garlic and/or some onion but I usually skip it. Also, I always have these spices on hand so that's what I use. I'm sure it'd be delicious if you used rosemary instead of thyme or whatever subs you have.
