Hello duckies,
Happy Monday! Did I mention yesterday that I bought another Asian pear and cactus pear? They were so good on our new foods challenge that I decided to splurge again. OMG, I actually have a" treat" in the house that is good for me! Woohoo!
I haven't logged my points recently because of laptop issues but will do that today. Don't forget to take a point for last week's library challenge. A point is available this week too for another article.
I think we need a prize challenge this week. How about the"cook a healthy new recipe" challenge? Make something new, post the recipe in the recipe thread, tell us about it. Challenge runs now through Saturday at midnight. Prize TBD. Pat, maybe we could use that prize you and I discussed?
Speaking of prizes, Dee, I swear yours is going in the mail today!!!
Today I am going for small steps so I don't get overwhelmed by everything on the to do list. And coffee. Drinking a lot of coffee.

Are the laptop issues better?
I finally ate the second chayote and I'm SO GLAD I waited until I had some of my taste back because it's delicious! I sauteed it with olive oil, garlic, onion, crushed red pepper flakes, a bit of sugar, and salt, and then finished it off with a bit of lime juice. YUM! Definitely going to be making that a regular thing as long as we can find it! It stays pretty crisp if you don't cook it for too long and the flavor is somewhere between a zucchini and an apple, maybe? It's also only 25 calories per cup!
I hit 50lbs lost and "overweight," so I went out and treated myself to some new clothes yesterday. It was nice to get new things, but ahhh shopping is overwhelming! I'm also JUST between sizes 14 and 16 so I went with 14s that are a bit tight so hopefully my weight loss doesn't stop completely! Trying to figure out this whole "capsule wardrobe" thing so I can use just a few items of clothing and have a variety of outfits, but I'm terrible at that. It's funny -- being in plus sizes is frustrating because you have so few choices, but being back in "straight" sizes is frustrating because there are too many.0 -

It was quite a nice weekend for me, but since I was out I didn't have a chance to log on and see what was happening in the group. Both of the derbies were a great time. At the roller derby I fell in love. The Humane Society of Utah had a small presentation at halftime and they were showing off some of the dogs they have up for adoption and they brought out this labrador/golden retriever mix and it was love at first pet. After checking that the dog was good with other pets, including cats, I discussed it with my housemates and I am going to try and get him after work. Hopefully someone else hasn't gotten there first.

I am pretty excited about this week because my work schedule has changed. I was working noon to ten, but now I have a normal schedule of eight to six.This change is going to allow me to participate in some of the sports that I have been sorely missing. Tuesday is racquetball and Thursday is basketball.0 -

Norah, congrats on the weight loss! Awesome job!! I know what you mean about clothing size changes!! It is great to mix and match tops and bottoms to come up with different outfits!!
Karen hope your computer gets fixed! Zac....hope you get the dog....if not...there are loads of rescued animals out there that need loving homes!!!
Had a busy day at work....getting ready to call it a night soon!! The weather was a bit cooler today...only got up to 104 !! Next couple days is suppose to climb higher....just hoping the humidity holds off coz with the heat and humidity...it is a real killer!!!

Laptop issues here are pretty mundane. I need to order a new bezel (frame around screen) and a new cordless mouse. The mouse issue is what makes it difficult to use--the touchpad on this particular Dell is problematic, and my cursor winds up bouncing everywhere I don't want it to be. I just need to dig around to find the right shade of pink for the mouse, LOL!!
Here's a question for you all: to what extent are you following a food "pyramid"? How many servings of fruit, veggies, dairy, protein, etc? This week I've been looking at some of the food diaries of people who are losing a lot of weight, looking for inspiration and tips, and I'm shocked by how much junk food everyone is consuming. Among the morbidly obese, the pattern seems to be to starve all day, maybe eating a salad and some lean protein, and then eat sweets or processed carbs at night, so half of the daily calories are devoid of real nutrients.
I've been trying very hard to stay off the junk, sometimes with success, but I have to admit that I've gotten very lazy about breakfast (drinking a protein shake) and lunch (eating two lean cuisines--fish or chicken). I've heard repeatedly that many obese people are malnourished, and I can believe it.
So what do you do every day to make sure you are getting enough nutrients? If you aren't, what could you do differently? How can you avoid empty calories?

As an add-on to my last post, it's amazing how much food I can eat if I'm eating veggies and fruit. I can have FOUR cups of Brussel spouts for the same number of calories as 12 Doritos!

This past week was a not a great one for me nutrition wise. I stayed under calorie, but I didn't really have much that was good for me either. Normally to make sure I am getting the nutrients I need I listen to the advice of my sister the registered dietitian and I sometimes take some supplements. I try to make my lunch and dinner similar in their macro breakdown. I have some type of starch (usually rice or potatoes and sometimes pasta) throw in some vegetables and top that with meat (usually chicken).
When I snack I try to keep it balances as well. If I have something sweet I try to keep it small (maybe a pudding) and I make sure to balance that with some baby carrots or an apple.
The biggest issue I have with poor eating is when I don't plan meals ahead. I don't have much time to cook so if I don't have a plan for what to make or when to cook I end up eating something that isn't great.0 -
One of my favorite healthy meals is to cook up a big pot of brown rice (add a chicken bullion cube for every 1-2 cups of water), saute a couple of pounds of diced chicken breast, and microwave 3-4 packages of frozen veggies, then mix it all together. This mixture freezes beautifully in little pint containers or even plastic baggies. You can nuke it and eat as is, or throw it in a frying pan, shake some soy sauce on it, add some water chestnuts and Chinese five spice and scramble an egg into it and instant Chinese food. Or make a quick curry (melt a 1/2 tblsp of butter, add 1/2 tblsp of flour, stir over heat until you have a paste. Add 1 cup skim milk, heat while stirring. The butter/flour will thicken the milk to make a white sauce (to which you can add lo fat cheese for a light cheese sauce). Add a tblsp curry powder and a little cumin to the white sauce for curry. Or for Mexican, add some chili powder, roll it with some canned black beans, salsa, and avocado into a tortilla.
For veggies, I use frozen steam fresh bags of brussel sprouts, cauliflower, broccoli, and carrots. Green beans would be good, and corn too. And peppers and onions. I like this recipe because it makes a lot but with enough variety that I can eat it every day and not get bored. Plus the one prep followed by quick and easy warm up. If you feel like making the curry, the Chinese, or the Mexican in advance you can just freeze those into the pints too. I think steak tips or ground beef would work as well.
I'm going to cook this tomorrow and will try to post pics.

Just got home from my plant patrollers meeting (where we divvy up sections of the lake to look for invasive aquatic species). Good meeting--very excited group sharing stories of being terrorized by the great blue heron or our one enormous killer snapping turtle.
I love the plant patrol--good exercise!

Tomorrow I think I'll get on the scale and see what's happening. I feel like I haven't lost this week (you know those weeks when your body just feels heavy and bloated?) even though I should have dropped at least two pounds. I'm certain if I move the scale around enough I can find a room where I weigh less. ????
How are y'all doing? We just hit the three week mark. Only four days to the halfway on this challenge! How do we keep motivation high?
Personally, I am very motivated just by feeling more mentally stable (I'm not sure that's the right word... when I'm exercising regularly and eating healthy, I don't get as many highs and lows, depression or anxiety--I feel very even, generally happy. As soon as I eat sugar, I get the sugar high but then that's followed by the no more sugar LOW.) Hopefully the number on the scale tomorrow will be motivating, but if not, I know eventually it will move down.

Still the 11th in your neck of the woods, but the dawn is cracking here. I do not follow the pyramid thingy...I admit...I take mega doses of vitamins/suppliments just to cover what I don't take in. I am not binging on junk food, don't have any in the house. Have not been losing coz I was not exercising, but I kicked myself in the backside and started the treadmil a couple days ago...just needed to try and see when the best time it is do walk on it. Anywhoooo I have hit my 10,000 three days in a row....will keep on going...just LOVE that little vibration that goes off on the fitbit one that signals I hit the mark!!
Karen, that recipe does sound good...please copy and paste it in the recipe thread...that way when I get a day off, I can go back and copy and paste. I made one of your pita salad sandwiches the other day and loved it. Why did I not think of that. We get the fresh pita bread daily here!!

Hi Karen and everyone else. I'm around and reading post like Diana. I'm just in a really bad place right now so I've been keeping to myself. I've been doing a lot of writing in my journal exploring all my feelings, etc. And of course my therapist is out at a conference. I'm still keeping up with my activities, water and food (though with all the crazy going ons here in St. Louis the last few days I have to admit I've had to get creative). I didn't even get to go to my Monday night Gastric Bypass Support group tonight because of it and I really needed to go. But with the areas I have to travel through being in an uproar I don't feel safe traveling through them. I promise as soon as I can get out of this dark place I will post more often.

I'm not sure where we are posting our recipes but I guess I will do it here. I totally forgot we were doing it so thankfully I decided to cook up some cauliflower pizza dough for lunch. If you have taken a look at the calories in pizza the crust is killer. So thankfully with this recipe you can enjoy your slice (or more) without as big of a hit. Plus you get in several servings of vegetables.
Sorry for no pictures. I only new about the challenge this evening.
It actually tastes good. For what is essentially an entire head of cauliflower, it makes a delicious bread substitute. I used mine to make a pepperoni pizza but it could be great for wraps and sandwiches.
I roughly used this recipe and looked at a couple of other
https://www.youtube.com/watch?v=WYjsqeLHS14. Essentially all your doing is making cauliflower rice, which is shredded and cooked cauliflower. I chopped my cauliflower up and put it through the food blender till it had a grain size similar to, but a little smaller than, rice. I cooked it in the microwave (you can do it in a pan but really why bother) and then let it cool and most importantly, squeezed out as much water as possible. You don't want soggy pizza crust. You mix it with some italian sizzling, I added a healthy bit of garlic powder. Mix in an egg and some parmesan cheese. The cheese and egg help keep it all together.
Then you bake it off. For the love of all that is holly us parchment paper or a backing mat to bake the thing. No amount of foil and cooking spray will keep the thing from sticking. I backed it on both sides so that it was completely cooked and not soggy.
Then dress as you like. I did some low salt tomato sauce, some low fat cheese, turkey pepperoni and crystalized garlic.
