If you haven't tried low carb lasagna with thinly sliced zucchini as the noodle do yourself a favor and do it tonight for dinner. So yummy and full of flavor.

I've made it before. Really delicious and I didn't miss the pasta. Only thing is that it was kinda soggy, probably because of excess water in zucchini.0

Whether using zucchini or eggplant, sprinkle salt on them and let them sit for 30 minutes. Rinse and you won't have as much moisture coming out in the dish itself.0 -
I make this regularly...with one cup of real sauce (4g per 1/2c) added to 2# lean meat for the 9x11 pan and tons of frozen/thawed/drained spinach in my cheese mixture. It's soooo good. I also add italian seasoning to the meat to add more flavor to the lasagna without the added carbs of more sauce. I'm making this tonight or tomorrow!!0
