Keto cheese sauce

This made enough for one person, can easily be scaled upward:
1/4 cup hwc
salt&pepper&paprika to taste
3/4-1 tsp dijon mustard(I used 1, but love dijon)
28g freshly shredded sharp or extra-sharp cheddar
In a small pot, bring the hwc and seasonings to a slow simmer over medium heat, stirring occasionally with a spatula. Once it's bubbling gently, add the mustard and reduce heat to medium low. Stir it in and keep stirring frequently for a couple mintes; it will thicken slightly. Take off the heat, stir in the cheddar so it melts, dump over veg.
Was awesome over broccoli and while I ate it all, two if my kids wanted a taste and asked for it next time, lol.
