Seitan ideas?

Made myself some seitan -- I love the stuff, but husband's not crazy about it, so I'm planning to use it mostly for breakfast and lunch to up my protein intake.
Looking for non-dinner recipe ideas for it, especially for breakfast. I do have enough time at lunch for quick cooking & throwing together, but nothing elaborate.
In particular, I'd like to make breakfast sausage patties out of it somehow, but not sure how. I did see instructions online for making seitan link sausages. I'm not vegan, so I'm not averse to using egg to glue it back together after grinding it up, but I welcome any thoughts.

I bought some chorizo-style seitan that I really loved and I bet you could reproduce it by adding in chopped onions and some seasoning. Really enjoyed sauteeing that with some peppers and mixing into brown rice.0

Can't do it...gluten free and Paleo. There is so much else out there why are you wanting to use that?

I'm not to Seitan and absolutely love it! Got some smoked slices from the local health food place and had it for breakfast with thin sliced and baked potatoes and an egg on top.
How do you make it? I've tried once and it didn't come out well0 -

Yes, there are a lot more foods out there, which I eat with gusto. I'm the person who will have both tofu and steak in her fridge. Never met a veggie I didn't like. It's the rare food I won't eat. Can't quite bring myself to eat sardines, pickled herring (hubby's favorite) or any shellfish that still looks like itself, eg. crab cakes are great, but not cooked crabs. And I'm working on sardines.
Plus, I've tried gluten-free and it made no difference in how I felt physically. If you are gluten-free and it works for you, good for you.0 -
How do you make it? I've tried once and it didn't come out well
I just bought the Bob's Red Mill bag o'gluten and followed the recipe on the side. Some spices, two cups gluten, two cups water, knead, cut into chunks and simmer in water with soy sauce and molasses for I think about an hour.
What went wrong with yours? It tends to explode in the pot, it expands so much, but that's the biggest difficulty I've had with it.
