Last night I sauteed some yellow and red peppers (I don't like green), with some water and a little of the balsamic dressing in the recipe book.

I also make an old weight watchers soup - diced zucchini, diced carrots, diced onion, 1 14 oz can stewed or diced tomatoes, chicken bouillon cube, garlic, salt and pepper, crushed red pepper. If I want to make it Italian I use Italian stewed/diced tomatoes, basil or oregano. If I want to make it Asian, I add a little coconut milk, bok choy, mushrooms, vegetable broth and a tsp of soy sauce, snow peas (not a fan). The recipe could be adjusted to make it Mexican flavoured as well. Add jalapeno pepper, canned diced tomatoes, Mexican-style, cumin, chipotle peppers in adobo sauce, lime juice.

    the possibilities are endless.

Also: red lentils and garbonzo beans or any type of bean could be added to boost the protein.

1/4 cup (2 oz) of dried red lentils = 4 oz cooked = 1 yellow container
