Makes 2 servings

3 Large Egglands Best Eggs
1 Johnsonville Chorizo Sausage
1/4 Cup Rotel -Origional Diced Tomatoes W/ Green Chilis
2 Borden - Triple the Calcium Grilled Cheese Melts
1 cup frozen spinach (measure frozen then wilt in butter)

1. Cook spinach to desired softness and set aside
2. Cook chorizo fully, when almost cooked, toss in Rotel and simmer a bit to cook some water off
3. Add spinach back in and stir, then spread all ingredients out.
4. Wisk the eggs and put over other ingredients in pan. Do not stir. Cover with lid and let eggs set.
5. Once eggs set, cut down the middle and divide in half.
6. Put into 2 bowls and add 1 slice of Borden - Triple the Calcium Grilled Cheese Melts to each bowl.

To increase Fat, I add 1 Tbsp of Daisy Sour Cream Pure & Natural to each bowl.

Try it out, I really like it. Little heavy on the protein, but add the fat of your choice. :smile:

    After I cut the egg mix in half, I do kind of a pizza slicing to it. Making 6 even slices. One slice in bowl, break up half a slice of cheese, add another egg slice and top with rest of cheese slice. Add last egg slice and done.

    Do this for both bowls and the hot egg mix will melt the cheese. Top with sour cream of choice. If saving second portion for later, don't add the sour cream until after you reheat it.
