White Potatoes

Hi Guys!

My husband and I are subscribing to a CSA (community supported agriculture). It's fantastic! Every week we pick up a box full of locally grown veggies. For the winter, we are receiving things like collards, lettuces, sweet potatoes, cabbage, carrots, broccoli, cauliflower, and a variety of fruit. Here's my question for you guys:

This week we received several, very large white potatoes. We intend on eating them, but I do not want to eat all of them very quickly.... I want to eat them "in moderation" (love those words, right?). So my thought was to use my food processor and turn them all to hash, freeze it, and then eat them in small amounts each week, over time. This way I am not wasting our food, but also not eating too much potato at one time.

Do you guys have any other ideas?
