Soy flour for cooking?

has anyone worked with this? Craving fried chicken! Macros say 8g carb/10g protein per 1/4 cup, and in two pieces of chicken you'd probably ingest maybe an 1/8 c. Wondering how well this mimics regular flour.

    I doubt it mimics regular flour (the gluten+starch combination is pretty hard to imitate in any other single source and usually requires a blend), but I'm personally in the "avoid soy as a general rule" camp, so I don't really have direct experience with it.

    You don't need wheat flour like flour to have fried chicken, either. There's some awesome "breading" recipes out there that use things like almond meal or pork rinds, like this one -- http://www.generationyfoodie.com/2013/06/paleo-almond-chicken-fingers.html

    I don't know as I avoid soy as well. I generally use almond flour for breading, but have seen recipes for pork rinds and/or grated Parmesan cheese (the kind in the green can) as well.
