Missing bagels!?

Just made those babies today! Topped with scrambled eggs and bacon, or just butter and cream cheese.
I think i can make a loaf of bread with this mix, slice it, toast it, eat it!

RECIPE:

Makes 6 bagels:

3 cups shredded mozzarella
1.5 cup almond flour
2 tsp xanthan gum
4 tbs (2oz) cream cheese
3 eggs (2 for dough, one for egg wash)

Everything Mix:

2 tablespoons sesame seeds
2 tablespoons poppy seeds
1 tablespoon dried minced onion
2 teaspoons dried minced garlic
1 teaspoon coarse salt

METHOD:

Preheat oven to 400 degrees.
Place mozzarella & cream cheese in a medium sized microwaveable bowl and microwave for about 1.5 minutes.
Stir to combine everything. Make sure all the cheese is melted.
In a separate bowl, add almond meal, 2 eggs and xanthan gum.
Mix until combined.
Add the hot cheese to the almond mixture and work the to into each other.
Wetting your hands and kneading it in the bowl will prevent from sticking to your hands.
Mix until you have a homogeneous dough.
Portion dough into 6 balls, make patties to the size of your baking bagel/doughnut pan
Melt some butter and butter the pan
Beat remaining egg in a small bowl to make your egg wash, brush onto each patty.
Mix all of the Everything Bagel mix into a medium bowl and dip one side of each patty into it.
Drop patties into bagel/doughnut baking pan slots.
Bake for about 20 minutes, the dough should be slightly golden.

    Thanks, I might give these a try. The dough sounds similar to the Fathead pizza crust, which we love.

    Thank you for sharing these! I will have to try them as everything bagels. That's the one thing that we try to make work, a breakfast sandwich.

    They are delicious. You can make anything with this dough mix, rolls, bread, etc.. I think cooking time should be about 15 min, 20 min was a bit long
