So, I work for an expo tech company (we build the software that powers a bunch of things behind expos), so I always find out about different nifty shows. Here's today's gem:
http://www.pizzaexpo.com/
I had two thoughts on this when I saw it:
1. Holy crap, that's actually a thing?!
2. I wonder if anyone has ever submitted a pizza into the contest that uses the FatHead crust?
Yep...I have become that person.

OH MY WORD!!! I want that!
i'm totally trying to make this soon. I'm trying to get my boyfriend to get off the gluten but he insists that he will never give up pizza. We were listing alternatives to things he eats currently that have gluten and most he could live with out but then we got to pizza and he said, lets move on cuz thats never gonna change. I tried to convince him we could make it with a cauliflower crust, lol that didn't go very far.
But that pizza looks so friggin good.0 -
@Stbarber1 I can vouch for that pizza. Better than the real thing!0

Although totally not keto, there are a GROWING number of places that offer gluten free pizzas in the US. I was able to find alternatives at the pizza places and in the freezer section. Look for Daiya gluten and dairy free pizza for your hunny in the freezer. I used to get those and add my own favourite toppings.
The GF crusts at pizza places vary greatly. If they have no idea how to cook them properly, you'll always end up with terrible burnt crust.
If you're ever in KCMO, though, Spin Pizza on the Plaza has amazing GF pizza. I'll be "stuck" with their salads next time I visit, though. Not a bad thing...their salads are awesome, too.

Wow. That pizza DOES look good! And doable. Hmmm...

Give it time, my hubby was the same way. As my influence grows, he's finding more and more that typical pizza doesn't go over well and sits like a hunk of lead in his stomach. He still gets it on a fairly regular basis, but we've dropped a lot of the lower grade, national chains, for higher grade, local/regional chains or mom and pop shops. The sizes he orders now are smaller, too. He used to get the largest he could, but has been finding that he can still make two meals out of a smaller one (down to medium on some items and large on others, instead of large and extra large). He even doesn't go to McDonald's hardly at all anymore, favoring Wendy's instead, and even that's increasingly fewer and farther between. And all I did was drop gluten from the main dinner menu.0 -

Thank you we also have a fabulous Gluten Free bakery near my house but they are always out of their dough balls when I go. My sister is GF for years now and she said the Freshetta gf is the best one she's had. I wonder how much he would notice a difference. Being from the suburbs of Buffalo NY we have an overabundance of pizza places. I live in a small down of 2000 people and we have 4 pizza places that all have amazing pizza lol0 -

I asked him "what if he ate pizza after limiting gluten and it made him sick" his response was "then i'll be sick and suffer"
Since he has crohns he doesn't know what its like to not have pain in his abdomen. If we could get to that point I know he wouldn't want to keep eating things that are making it worse. Its getting to that point that will be a struggle.0 -

I've never eaten it, but I've been told the Meatza pizza is another good option.0 -
Another +1 for the fathead crust. And it comes together really quickly (it takes longer to get the ingredients out and set up your prep area than it does to mix the dough). We've made two of them so far, planning another for Saturday.0

Yeah, my hubby had his gallbladder out nearly 15 years ago. Until recently, he thought the...shall we say... GI issues were part and parcel with that. He was a constant gum chewer and depended on carbonated drinks to get gas moving out of his stomach. He's always been a "you can have my pizza when you pry it from my cold, dead hands," type of person.
Then I stopped getting most of the grains we'd been keeping in our house. I'd "forget" to buy bread or buns or whatever. We still have wheat flour, but it takes like 6 months to go through a 5lb bag now, where we'd used to run through twice that in a fraction of the time.
His GI issues are all but nonexistant now, and show up more when he eats crap. When he packs his lunch and eats a home made dinner, he's fine. He goes through a little pack of gum in about a month, instead of 7-8 of those 3-packs. I no longer have Harrenhal models made out of Mountain Dew cans around my house, because we almost never buy soda (I had to cheer the other day, because my son got accidentally introduced to soda when he got his and his grandmother's cups mixed up, and he couldn't stand it; bonus points for the fact that my husband about cheered, too ).
So yeah, it's possible, but you have to be covert about it. And patient as hell. The more you nag, the more he'll resist, but if you just do things and basically take a "this is how this segment of food decision is, if you want something else, you can get it or have it for lunch or whatever" type of stance, he'll be quite a bit more receptive, even if he doesn't realize it at first.0
