Moroccan lettuce wraps

So, I've been on a bit of a lettuce wrap thing recently, mostly since I started really trying to do the low carb thing. I typically make a batch of filling on Sunday, and then have it for lunches during the week. I've had multiple versions of beef asian wraps, and a couple of weeks ago I made a batch of taco filling, with the addition of butternut squash and black beans. On Saturday we went to the farmers' market as usual, and again there were some butternut squash that just looked so pretty that I had to get one. Of course, once I got it home I had to figure out what to make with it. The first thing that came to mind was moroccan lettuce wraps, so into the skillet went some ground turkey, onions, and half of my spice cabinet!
1.00 lb(s), Ground Turkey 93% Lean
1.00 cup, chopped, Onions - Raw
2.00 clove garlic, Raw (136g)
0.50 cup, chopped, Carrots - Raw
2.00 cup, cubes, Squash - Butternut, raw
1.00 tsp (2g), Ginger
1.00 tsp, Spices - Cumin seed
0.25 tsp, Spices - Cinnamon, ground
1.50 tsp(s), Spices - Paprika
1.00 tsp, Spices - Turmeric, ground
0.25 tbsp, Red Chilli Powder
0.25 tsp(s), Spices - Salt, table
0.25 tsp(s), Spices - Pepper, black
0.75 cup, Chicken Stock
12.00 leaf outer, Lettuce - Cos or romaine, raw
1.00 tbsp (33g), Tomato Paste
0.25 cup (not packed), Raisins - Seedless (optional)
Brown the turkey with the onion and drain the liquid. Add the garlic and cook for 1-2 minutes, then add the spices and stir everything to coat. Add the tomato paste and stir, then the carrots and squash, followed by the chicken stock, cover and simmer for 5-8 minutes, until the squash is soft. Add the raisins and cook for 1-2 minutes. Finish with a little fresh cilantro if wanted. Serve in lettuce leaves.
If you don't have all of the spices and don't want to invest in too many of them for the sake of 1 tsp here and there, you can get away with just the cumin and cinnamon and maybe a little chilli powder or cayenne pepper if you like a bit of a kick to it. If you do that you may need a little more of each spice, just try to keep the proportions the same.

Found my fav Asian lettuce wraps & wanted to share.Have used leanest beef also. Both were good.

I've made it with lean beef and with turkey, personally I don't really taste much difference since it's all covered in sauce anyway!0 -
