New here, I am not sure how to enough calories

It has been about two weeks I have been wheat and dairy free. I started tracking because I thought I was eating too much. Turns out I am way under my daily calories. The more I read the more I feel I have no idea what I am doing. I am still enjoying some fruit and don't want to give it up completely but sure I will eventually.
I having a little trouble wrapping my mind around eating high fat as well, especially with no dairy to turn to.

My formula was weight x 12 = daily calories to mantain. Then i minus 500 (one pound is 3500). When you eat low carb you really only have to track your carbs to make sure you're below your target. Don't be scared of the fat. I eat avocados, almonds, olive and coconut oil. Your skin will look good and you won't look haggard like a lot of people that lose weight by eating too few calories. The lower the carbs the quicker you'll shrink!0

I have been at it non stop for 8 months and still the more I read the more I know how with I know. After about a couple months I had back cheese, heavy whipping cream (3200 calories per quart) and like milk products. I added Fulvic Acid about a month ago based on what I have learned of late.
Keep up your good work. It comes over time. I did not lose weight in my case until the end of two months of being in ketosis but did lose an inch in my belt size and people were telling me I had lost weight but my scales said I had not. Stick with the cause and do not let the scales freak you out it it does not drop very fast.0 -
Thanks all for your replies! I did find the launch pad. I will have to go back to it now that I have more understanding. I have lost 8 pounds since I started, and feeling better already.0
