So, I tried it today.

It's freakin' AWESOME.

Here, if you don't know what I'm talking about: http://nomnompaleo.com/post/74180911762/cracklin-chicken

1. She's not kidding about using a splatter screen or putting a towel down. Don't fry bacon naked applies to this as well. I won't be doing it again until I get a splatter screen, and I'm the sort who deep fries on the stove on a regular basis.
2. If you're feeding someone who doesn't like the texture of fat, skin their chicken thigh and fry it that way. Hubby does not eat chicken thighs, and he's now on his second.
3. While you might think it would be tasty on top of a salad, don't be surprised when your husband/SO looks at it & says, "Hello, Chicken McChicken" and turns it into a sandwich with bacon and ranch.

Made it today! (I almost joined the Cracklin' Saturday team but it got too late by the time I found a skillet)

This is DELICIOUS! For reheating, I baked it for 10min at 375°F and then threw it skin side down back in a pan (doesn't have to be the skillet) to crisp up the skin.

Omg so tasty, and VERY filling!

I love Michelle Tam - her recipe's are amazing! Cracklin' Chicken in particular has completely changed my view on chicken thighs... which is awesome because they're such an economical cut of meat!
