I'm just trying this one for the first time myself but I found it in an old cookbook that has always been one of my favorites. If there is a way to make it "cleaner" please let me know.

IRISH STEW
Serves 4

5 medium size potatoes, peeled
2 1/2 lbs lean lamb (we only use locally raised grass-fed and finished lamb, I go out to the farm frequently because they also have a yarn shop)
3 large yellow onion, peeled and sliced thin
4 tsp sea salt (I use less)
1/4 tsp white pepper
1 quart cold water
2 tbsp fresh parsley, minced

Layer potatoes, lamb, and onions into a 4-quart kettle with a tight fitting lid, beginning and ending with potatoes. Add salt, pepper, and water, cover, and simmer about 2 hours until lamb is tender. Cool and refrigerate, covered, at least 3 hours. When ready to serve, skim fat from surface and discard. Heat stew, covered, over low heat until piping hot. Ladle into heated soup bowls, include plenty of liquid. Sprinkle with parsley and serve.

Book claims 400 calories, 100 mg cholesterol. Calorie counter recipe app disagrees.

    Sounds delicious, and pretty clean too! I love anything with lamb!!

    I don't see anything in here that isn't clean. I know for some people potatoes make it hard to lose weight. You might consider replacing some of these with cauliflower.

    Grass-fed lamb is very nutritious. I love lamb.

    I know black pepper helps your body absorb nutrients easier. I don't know whether white pepper has the same effect.

    When I make stews I skip baking potatoes and either sub some sweet potatoes or add more veggies (carrots, cauliflower, zucchini, broccoli, etc...)
