I made something like chocolate chip cookies this morning using almond flour pancake batter and semisweet chocolate chips. But they were not as dense as I would have liked, what could I do to make them denser?
Here's the recipe
1 cup almond flour
1/4 cup water
3 tbsps unsalted butter
2 eggs
1 tbsp sweetener
1/4 teaspoon salt
Dash of vanilla
1/4 cup semi sweet chocolate chips
Everything above the chocolate chips makes an excellent pancake batter(it's from allrecipes.com) vanilla an addition I made, not perfectly round like white flour would make them, but very tasty.

CAVEAT - I haven't done much low carb baking, just traditional baking.
Additional eggs would make it more cake-like traditionally. An extra yolk without the white can make it dense. What I do in my traditional batter is blend the yolks in, then folk in whipped whites for fluffy rise. I don't know how that would work here. but maybe add more "heft." But adding too many eggs can taste eggier...
I would think that a dash more almond flour might do it, too. I don't know how xantham gum bakes up, but that is a thickener...
Hope someone else has better suggestions.
Maybe look up and almond flour chocolate chip cookie recipe and compare ingredients?0 -
Would a bit of coconut flour help? I dont use it often, but I know it absorbs moisture like a sponge

More butter works, too. Works pretty much the same way as egg yolk (more fat, basically).
You can also probably back off on the almond flour some.
It's a ratio thing, basically.0 -
Wouldn't you just leave out the water? Maybe add a little baking powder if you want them to rise a bit?0

All of the above plus - can I also suggest - add 1/4 cup ground flax meal (also adds fibre) or a couple of tbsp of your favorite nut butter or replace half the flour with LSA. Coconut flour can be tricky and is more likely to make a crumbly result than denser - in my experience.0
