Beef Stroganoff for 378 cals

Tasty and not too bad for you and can have with anything you like to top up and still be a low calorie meal.

Info as follows: -

Carbs 19
Fats 22
Protein 25
Sodium 682
Sugar 6

Ingredients (Serves 1): -

90g Thin non fatty beef cut into strips approx 5mm each (I used Tesco Scotch Beef Sizzle Steaks)
125g Chestnut Mushrooms (Chopped))
100g Red Onion (Chopped)
150ml of Beef Stock (I used 1 beef Oxo cube and 150 ml of water)
1.5tbsp Sour Cream
0.5tbsp Plain Flour
1.0tbsp Olive Oil
0.5tsp Paprika
0.5tsp Parsley
Pinch Salt
Black Pepper

Method: -

Put oil in a Wok type of a pan and heat up. Season the beef with the Black Pepper and Salt and brown in the pan. Once browned remove from the pan and add the Mushrooms and Onion and cook until softened and golden brown.
Reduce the heat slightly and add the Flour and Paprika before slowly stirring in the Beef Stock.
Whilst stirring constantly let the mix simmer for a few minutes.
Add the Sour Cream and the put the Beef back into the pan. Stir well and simmer for a further couple of minutes.
Serve.

I had mine with a wholemeal Pita Bread making the total calories for the meal 582.

    Hope you enjoy it. I made it again the other day and did some roasted butternut squash with it. Very filling and even had enough for lunch the following day at work.
