Healthy no bake cookies

These cookies are pretty amazing and simple to make. They also have a lot less sugar than normal cookies. Whenever I make them they don't last in my
House for very long.
Ingredients
1C natural peanut butter
3/4C honey or agave
1/2C coconut oil
2 teaspoons of vanilla extract
2 1/4C gluten-free quick oats
6 tablespoons cocoa powder
Parchment paper/wax paper
Sheet pan
Method
-Combine the 1st three ingredients in a sauce pan and warm gently on the stove top. If your using raw honey just make sure to heat enough for the oil to melt and the peanut butter to soften.
-Add the vanilla, cocoa, and the oats. Still well.
- using a spoon or a small ice cream scoop, portion the cookie mixture onto the sheet pan with the parchment paper and let cool. Keep them stored in an airtight container in the fridge.
- If you want you can use almond butter or regular butter. Just remember with the regular butter it has more sugar and you want to keep the sugar low.
