I have just recently decided that I wanted to lose some weight and tone up. I hardly ever cook at home and I know that is a main part in eating healthy, saving money, and losing weight. What are some of you favorite healthy recipes to make at home and also are easy?

One of my favorites is salsa chicken. Put 4 chicken breasts in a crock Pot pour a jar if salsa over the top cook on low 4-6 hours until you can shred it. Put it over whole grain rice and some black beans or you can use whole wheat tortillas.0

I make a "salad" with 1 chopped avocado, 1 chopped cucumber, 2 chopped (small) tomatoes, 2 T. chopped onion, 1 T. Olive Oil, 1 T. Balsamic Vinegar and a splash or two of Lemon Juice. Sometimes I add a little kosher salt and garlic. I eat this as a side dish but also take it for lunch at work. I toss in a tuna pouch or whatever leftover meat I have. It usually makes 4 cups and I use 1 cup servings. I calculated in myfitnesspal and it is usually about 100 calories per serving.0
