Sauerkraut & Sausage Recipe

As a Type 2 diabetic, I'm always looking for simple low-carb recipes. This one makes 4 servings with 206 Calories, 5.8 Carbs, 2.1 Fiber, 2.1 Sugar & 8.9 Protein per serving.

1 Polish Sausage, cut into bite size pieces
1 can Sauerkraut, drained
1/2 cup Onion, chopped
1 Apple, cut in bite-sized pieces (optional)

-Brown sausage in skillet, remove & set aside
-Add chopped onion to skillet & cook until soft
-Add apple for last couple of minutes
-Add sausage back into mixture
-Fold sauerkraut into mixture; Ready to eat when sauerkraut is mixed well & hot.

I wrote up this recipe on MFP so I can add to my food diary in one click whenever I have for it dinner.

    Mmm. I adore sauerkraut and sausage. I'll bookmark this and give it a go. I'll have to find a substitute for the bf since he's not big on sauerkraut.
