Almost a year of meat, non-fasting cholesterol.

I generally provide total transparency when I get test results of any sort, I post what they are. The good, the bad, and the ugly get posted. I see no purpose in trying to hide what's happening.
Anyway, I gave blood on Friday. They don't do much aside from blood pressure (118/66), hemoglobin (16.8 g/dL), and total cholesterol. That last one is the one I really was interested in. I had an unusually (for me) high total cholesterol when I had my blood lipids done in January/February. It was 250 back then. That didn't worry me (my HDL and trigs were fantastic and those are the numbers that matter). Still, I wondered if I was just going to have higher total cholesterol. I normally fall between 185-215 when I donate. The 250 was up there.
Anyway, I just got the total cholesterol results back. It was a 192. That's right in my normal range. We will have to wait for a full lipid profile for better numbers than that. It's meaningless on its own. My doctor said she wanted to do another full lipid profile at the 3-4 month mark (from the previous one), but she never followed up on it. I'm not concerned enough to press the issue.
That is all. Carry on not eating your carbs.

I had my blood drawn last Friday as well, and got back results this morning. I'm not a total carnivore like you, but I do keep carbs down to under 20g and am somewhat higher on the protein (95-110) compared to others. Honestly, I don't pay much attention to fat. I eat a lot of it, and have no fear of doing so.
Below are today's results, and a comparison to my baseline test from October 2014. I'll also add that my cholesterol went the wrong direction for about 5 months before things started to normalize. Like you, I'm not that concerned about total cholesterol, other than it seems to send most healthcare professionals into freak out mode. Overall, I was really happy with the last results.
Blood Pressure: 112/72 (down from 146/94)
Total Cholesterol = 178 (down from 195)
HDL = 61 (up from 34)
LDL = 99 (up slightly from 95)
Triglycerides = 91 (way down from 330)
Fasting Blood Glucose: 71 (way down from 288)
A1c: 5.4 (way down from 12.5, when I was severely diabetic)0 -

@SteveKroll congrats on such an amazing evolution! Btw, I'm slightly envious of your FBG, I'm over the moon when I get it in the 90s (usually 100 ±5).

I doubt mine will be that good... but after reading a couple chapters of the Cholesterol Clarity, it sounds like lipids go high during the pendency of the diet and settle down once you stop losing weight. I'm not going to worry about my lipids. My glucose levels are more important to me now...
