Marrow bones/Bone marrow

By all accounts, it is great awesome stuff, made of legends.
Why then does nutritional info on it differ so much? Some say it is full of protein, others say there's almost none, and Dr. Loren Cordain of Paleo fame says there's a little.
With this much difference, who do I believe? How do the methods of derivation differ? How does each method calculate the contents?

    There is very little protein in beef marrow, but it is high in essential fatty-acids. It is also unbelievably delicious.

    I thought it was mainly fat?

    How do you make it?

    I baked one femur bone slice for 15 at 350° with salt and pepper. My stomach is feeling kind of rough now. Maybe I need to get used to the texture or mix it with something? I have 2 more that I don't want to waste, so I need some ideas.
