This was what I ate on Day 3:

Breakfast: Nectarine and cashews
Lunch: Spaghetti squash and meat sauce
Dinner: Chicken breast, fresh guac (avocado, garlic clove, lemon juice, little yellow tomato, salt and peper), roasted sweet potatoes, and spinach chips

    Breakfast today was a handful of cashews and dried apricots. Lunch is basically my dinner last night in a new form- i diced up the chicken and made a sort of chicken salad with the guac. Then just put that on top of the sweet potatoes. It's not too shabby. I also have some sugar snap peas and cherries lined up for snacks.

    Tonight for dinner (as of right now) I am planning on making a sweet potato hash with onions and bell peppers and topping it with two over-easy eggs. Might throw some spinach in there too... I think I bought too much in one shopping trip, and now it's getting to the brink of going bad :(

    Do you guys have that problem? Buying produce and not using it all in time? I think I may need to start going to the store more frequently and buying only what I'll be using in the coming 3-4 days... I don't know, that most likely won't happen... but I do need to figure out how I can get away from letting things go to waste! Anyone have any tips?

    I usually buy a weeks worth of food. But I run into the same problem too. If I find that some of my produce is going bad or looks like it will be soon, I try to incorporate it into all of my meals. Sometimes though, I'll end up having to throw things out which stinks! I try to put some of my veggies in concealed containers. I'm not sure if that helps them last longer, but I feel like that's better than what they come in.

    Yeah... I think I just overestimate how much spinach and avocados I'm going to use each week... and tomatoes. Produce is just so pretty I can't help but buy it! haha

    So Day 5 is in the books
    Breakfast: An apple and cashews
    Lunch: Two stuffed bell peppers with the leftover meat sauce from earlier this week
    Dinner: Lemon Garlic tilapia, green cabbage slaw, and roasted potatoes

    They just have coconut, sesame seeds, dates and ginger. Whole 30 approved and pretty good!

    I have the same problem with produce. If its spinach, I either saute it or put it in a smoothie. If kale starts to look a little wilted I make some kale chips. If its zucchini or peppers I make roasted vegetables and save to eat over a couple of days...

    How long do you bake your kale chips and at what temperature? I made them once and ended up burning them... but I know I need to give them another try.

    So today's eating wasn't the best. Well mostly just dinner. Started the day with a hard boiled egg and a banana. Lunch was shrimp with salsa with strawberries and kiwis on the side. Snacked on some sugar snap peas mid-afternoon. Then dinner was almond milk with two Lara bars out of pure laziness... So delicious though!

    But then I was good and cooked legit food for my lunch- Sesame Almond Butter Zoodles with Chicken. So excited for lunch tomorrow! It's exactly what I needed to spice up my eating this week. I'll share the recipe on the Recipe board.

    Sesame almond butter doodles sounds great

    Had my power smoothie for breakfast. Lunch was a chopped salad with turkey, turkey bacon, bell peppers, banana peppers, onions and homemade balsamic dressing. Also had apple slices with almond butter.

    Dinner will be taco salad with salsa. I love ground turkey with homemade taco seasoning. Probably some blueberries

    Thanks for that kale chip recipe! I followed it to a t and they came out great! I know completely understand the obsession with them.

    This weekend was definitely hard, but I stayed the course. Spending the weekend at my boyfriend's house really tested me, especially when our date night consisted of bowling and a movie (with concession stands that had absolutely nothing for me). Luckily there was a diner just a block from the movie theater and I got an omelette with a side of fruit.

    Tonight I had a delicious dinner of scrambled eggs with guac and salsa, with side of kale chips. So good. I think using coconut oil to coat the pan for the scrambled eggs made them creamier. Best eggs I've had in a while.

    Spending the night at my parent's tomorrow and my mom even said she would cook any Whole30 meal that I want, woohoo no cooking for me! Picked these Pork Burrito Bowls out on Pinterest, so I am very much looking forward to it. http://thehousewifeintrainingfiles.com/pork-burrito-bowls/
