Highish Protein Cold Salad Recipe I made up - yum

This recipe is the bomb and it is easy to make high protein and lowish carb which is super hard to find in our vegan world I think. I've adapted it from a local salad a deli near me carries.

You need:
2 cups of wheatberries (BUT I used TVP which met my macros better and I like the taste/texture here) cooked or prepared
1 cucumber diced
2 tomatoes diced
1 onion (they use red, I did vidalia, both good) diced
2 oz pine nuts (I used cashews) chopped
big splash lemon juice
1/4 cup olive oil
to taste: basil, parsley, oregano, salt, pepper, vegan substitute for feta cheese

You can really play with the amounts but this is the perfect sort of thing when you're craving a cold salad and I would totally take it to a potluck.

If you include all of my substitutes (I didn't add any cheese fake or real) the nutritional info works out to 175g per serving, 10 servings, 167 cals, 8 grams fat, 12 grams carbs, 12 grams protein. I used a scale so eyeballing it I'd say a serving was roughly 3/4 cups or 1 cup per serving.

    I know right! of course right after I made this salad I found the ones I bought just for this - doh! next time. I buy them in bulk from one of the fancy pants stores so it's not too bad

    I've seen pine nuts at Costco lately if you're into them. You'd probably save a ton over time.
