MINI CHALLENGE #2 Saturday 26th- Oct. 2nd

Round 2, are you ready? You can either continue doing the added 10 minuets a day with this one or just do this one. It's all up to you. For this weeks mini challenge, it's all about food. 3 - 4 days this week you need to cook something healthy and share it and the recipe with us. Pic's are great but not required. It can be a whole meal or just a part, breakfast, lunch, dinner or snacks, its all good. One of these need to be something you have never had before..think out of the box and walk your produce section. Fall foods are coming and they can be so good. I can't wait to see what you share! Who's in???

    I'm going to be using my crockpot more often, so if I like any of the recipes I try this week I'll be sure to post them :)

    I am going to try this challenge too. Started last night and made vegetable soup. I can't say I followed a recipe, but I threw together:

    1 head of red cabbage chopped
    5 stalks of celery diced
    1 large can petite diced tomatoes
    1 onion diced
    1/2 bag sweet mini peppers chopped
    1 box of sliced mushrooms
    1 cup of lentils
    1 pkg of vegetable base
    All of the following to taste:
    cayenne pepper
    black pepper
    crushed red pepper
    sea salt
    Italian sausage (if you like it)
    Water to you desired thickness

    This makes a lot and I am the only one in the house who will eat it so I won't be cooking an evening meal for a few days, but will experiment with breakfast. Pretty tasty soup.

    That soup sounds great, I will have to try it. Tonight with roasted chicken we had roasted carrots and radishes. I think any veggie is so good roasted. Just a little olive oil and seasoning and they are yummy.
    Remember it takes a combination of exercise and healthy food, they go hand in hand.

    Today was slow cooker beef day with onion, carrots and tomatoes - the beef was marinaded overnight in Teriyaki sauce and cooked on low for 8 hours - smells great and nothing to do but eat now I'm back home. Probably going to have it with either rice or a few potatoes - depends how I feel later.

    Here is the crockpot recipe I made - tried it for dinner and it's great.

    1 lb chicken breast
    1 large or 2 medium pears
    8-10 oz mushrooms (the recipe called for portabella but I couldn't find any so I just picked a couple different ones)
    0.5 cup Balsamic vinegar
    Salt and pepper to taste

    Mix all ingredients in the crockpot and put on low heat for 4-6 hours. I cut up the chicken so I did 4 hours and it worked great. It sounded a little weird with pears and chicken paired together, but it actually works really great together. The pears bring out the sweetness in the vinegar (or maybe the other way around). I had 1/4 of the recipe with 100gm of rice and it was 238 calories. Added a salad to the side and had a great meal :)

    Made this today:

    One of my go-to faves is frozen salmon (1 4 oz filet). Thaw under running cold water for about 10 minutes. Then you can either bake it at 350 F for 15 minutes or grill it on the stove top. I like to add some PAM spray, then the salmon, and then season with Lawry's salt, garlic powder, and sometimes poultry seasoning. If you like spice, add black pepper. I also bake/sautee some type of vegetable along with it--either frozen mixed vegetables (thaw first), red potatoes, or mushrooms, tomatoes, and spinach. SUPER easy if you're not a cook, like me, and so healthy.

    Yesterday did an extra evening step class (promo freebie!). Tonight husband made Carrot & Coriander soup - yummy!
    200g carrots
    40ml very low fat creme freche
    1/4 onion
    1/2 garlic clove
    1/2 tspn chopped coriander (frozen)
    200ml of vegetable stock
    5ml olive oil
    Dash Lemon Juice
    Dash Worcester Sauce
    carrots, onion and garlic sealed in olive oil
    Add 200ml stock to pan
    season (incl lemon juice and Worcester Sauce)
    Cook for 20 mins until everything softened
    Blend/process
    Add creme fruit - serve warm.

    Just noticed the auto correct changed my creme fraiche (in carrot & coriander soup above) to creme fruit! No need for fruit in the soup lol

    I made Morning Glory Muffins yesterday. They take quite a lot of time to make so I made a double batch and froze them. I've modified a yummy recipe I found online to make it healthier. I've substituted ALL of the oil with zero-fat greek yogurt and ALL of the sugars with unsweetened apple sauce. To boost flavour and sweetness, I add orange zest from 2 oranges, a few extra raisins, and spices: cinnamon, nutmeg, ginger and allspice. I just love them and, with a piece of fruit, they make a completely healthy breakfast - so filling and delicious. For those who struggle with grabbing a breakfast sandwich or a pastry on your way to work - this might be a good solution.
