I accidently found this today - anyone else use them? I was looking for more fiber
Ecoideas Organic Skinned Whole Tigernuts --- Nature’s richest source of FIBRE
Tigernuts are small tubers, not actual nuts – an important fact for those with allergies. The ancient Egyptians knew that the fruit of Tigernuts’ grass (Cyperus Esculentes) was highly beneficial, both as medicine and nutrition. Its root tubers are distinguished by an unusually high proportion of fibre and a delicious taste.

Hmm, they look interesting, but perhaps a bit high in carbs for keto? I wonder how they taste?
This site has a nutrition chart:

side giggle, from above site blurb: Maybe this is where Ben Carson got his pyramid theory?
Furthermore, historical documents show that Egyptians not only cultivated TigerNuts, but that Pharaohs’ tombs were filled with these “sacred roots.”0 -
I don't count the fibre carbs and right now I don't even care abut carbs, I need a few pounds of fiber in me.
They taste natually sweetish, very chewy and may be an acquired taste.
I MFP under Ecoideas - Whole Tigernuts0
