Hickory Smoke Burger Stuffed Peppers

I Got out my mini food processor and ground up the burger.
I cut a bell pepper in half length wise.
I sauteed some onions and mushrooms (About a quarter cup total).
I added the meat to the mixture with a half cup of tomato sauce.
I then stuffed the pepper halves (They were really overflowing) and used 1/2 cup of tomato sauce to cover them.
I baked them in the oven for about 45 minutes, then sprinkled some fat free Parmesan cheese on them.
I baked another couple of minutes.
Best stuffed peppers!!! I was really, really full!!
If you wanted to add a smart carb as a binder, you could grind up a slice of whole wheat bread as crumbs to mix in, but truly, that burger was moist enough to hold it together.

I have made stuffed peppers with the black beans and rice with 1/2 cup low sodium canned tomatoes and a wedge of laughing cow cheese. It's really good.0
