@twibbly shared this with me for Canadian Thanksgiving in early OctoberTwibbly wrote: »
If you decide you have some extra time and need something pumpkin flavored, may I make a suggestion?
http://mariamindbodyhealth.com/pumpkin-swirl-cheesecake/ - You only need about 1/3 of the crust, and I didn't bother messing with the swirl, just mixed it all up. I made it in little tiny mason jars & an 8x8 pan.
I modified it by skipping the crust and adding 2 or 3 more eggs to the cheesecake filling to make it firmer so I could eat it like a cheesecake square instead. I made the swirl since I had no crust.
I also skipped the sugar alcohol and used 3-4 droppers full of stevia drops.
I make my spices a bit stronger too.
It turned out really good. I've made it twice, and did a modification of the recipe by removing the pumpkin and adding cocoa for chocolate cheese cake on another ocassion. Yummy.

I've been looking for cheesecake recipes too and found this list. A couple don't look very LC to me but I may use just the filling and serve it as a mousse.

Of course, true and tried recipes would be better but I'll have so many people around that nothing ever goes to waste, lol.0 -
