I've used ground meat and egg, instead of breadcrumbs. Ground prawns work really well in crab cakes.0

I almost always sub a half/half mix of almond meal and hand shredded Parmesan cheese for breadcrumbs and it almost always works flawlessly. Few tips I've discovered, for the best chicken breading, add some hand crushed almond slivers (think: very coarse almond meal), did it in a pinch and they were the best and crunchiest tenders ever! Another option is mixing in some crushed pork rinds but as I don't like them much I don't use it often- however it does make for a more substantial finished product.
My most common chicken breading tho is 75% almond meal and 25% coarsly crushed slivered almonds. The Parmesan spatters too much for frying. But for a stuffing, I'd do 50/50 meal and parm.
