Recipe thread

Hey everyone - I figured I'd start a thread where we can share some of our favorite recipes. I haven't figured out a way to easily share recipes directly through MyFitnessPal so thought this might be the easiest. I'll kick it off with this Apple Pork Chop slow cooker one: http://wakeupthesoul.blogspot.com/2012/10/crockpot-apple-porkchops-and-other.html

The chops were pull apart good - without a knife - and the apple really made them delicious.

    Easy make ahead for lunch (or if you are like me and don't care if breakfast is a little strange).

    Slow Cooker "Pesto" Chicken
    - 10 Chx Thighs - 1/2 Cup + 1 TBSP Olive Oil - 4 Cloves Garlic - 1 Cup Basil Leaves - 3 TBSP Lemon Juice

    1) Add 1 TBSP Olive Oil to the Crockpot base.
    2) Layer in the Chicken Thighs in the pot (I have a 7 Quart Crockpot so it spreads out into two layers basically)
    3) In a blender, combine the garlic, basil, and lemon juice by pulsing a bit until roughly chopped. Add in the 1/2 cup of OO slowly while blending the ingredients. May need to use a spatula to scrape the sides of the blender a bit to combine everything.
    4) Pour the "Pesto" mixture over the chicken and make sure to spread it around to reach the lower layers a little.
    5) Add Salt and pepper as you see fit. I also toss in Sesame seeds just because they're in my cabinet.

    6) Cook on High for 4 hours or on Low for 6-8 hours. Chicken comes out pull-apart tender every time and the house smells great.

    Combine with some sweet potato or veggies of choice and you're in good shape. I treat 2 Chx Thighs as 1 serving so 5 servings total.

    With the Storm on Saturday, I spent a good portion of my time looking for new recipes. Started exploring this site: www.yummly.com that allows you to put in (or take out) ingredients you like or don't. If you have Swordfish, tomatoes and basil but no mushrooms in the house, you put that in and it pulls up recipes that have those three ingredients and not the fourth. Really helpful!
